How to Make Vegetable Biryani
- 1lb. potatoes cut into 1/4-inch cubes
- 1/2 c. blanched or boiled almonds
- 1 lbs red onions, cut into pieces
- 4 Capsicum (mixed color) cut in long slices
- Canola oil
- 3 cup long grain or basmati rice
- Water
- 1 tsp. Organic Biryani spice (Buy it here)
Method:
- Fry potatoes in lightly oiled skillet until tender. Set aside.
- Fry almonds in lightly oiled skillet until slightly brown. Set aside.
- Add a little oil to the skillet and fry Onions and 3 color mixe capsicum Set aside.
- Place basmati rice in pot and cover with water. Bring to a boil and remove from heat.
- Drain rice.
- Coat another pot with oil and place on medium heat.
- Add rice, salt to tasteĀ Biryani spice. Stir for one minute or two.
- Cook about five minutes longer or until done.
- Mix potatoes, almonds, cooked Onions and Capsicum and rice in a large casserole dish.
- Serve immediately with Yogurt or Raita.
