Original recipe makes 20 servings Change Servings

1 medium head cabbage, shredded
1 large red onion, diced
1 cup grated carrots
2 stalks celery, chopped
1 cup white sugar
1 cup white vinegar
3/4 cup vegetable oil
1 tablespoon salt
1 tablespoon dry mustard
black pepper to taste


In a large bowl, combine cabbage, onion, carrots, and celery. Sprinkle with 1 cup sugar, and mix well. In a small saucepan, combine vinegar, oil, salt, dry mustard, and pepper. Bring to a boil. Pour hot dressing over cabbage mixture, and mix well.

    Add the sugar and vinegar to heat so the sugar dissolves. Let cool, then
    add the oil. Pour on cabbage mixture.

    i like the flavors except for the sugar… but i will put everything in a
    jar (with the spices, omitting the oil and the vinegar as the fermenting
    vegetables form their own vinegar, although i might use a tablespoon of
    unpasteurized apple cider vinegar to raise the acidity) after i salt it to
    start the vegetables sweating. i will ferment them for up to five days and
    it will be a great sauerkraut/slaw that will be great raw (full of natural
    lactobacillus probiotics). i like the spices you used.

    You don’t need the sugar. Just add oil, vineger (lots of it) and a little
    salt. And you are good to go. What is healthy in this salad the sugar or
    the boiling dressing?
